3 tips for a successful recipe:
- Pat the inside dry before putting the filling in
- Place it breast-side down in the baking dish. This is the thinnest part and prevents it from drying out during roasting.
- Don't overstuff it with filling, as it will expand slightly during heating. This also runs the risk that not all the filling is cooked through.
